●Of course, I agree, that it may cause channeling, but it also puts this little bit of coffee from the sides inside the PF, which is good. I don't wont to argue about those small fractures caused by the "knock" but that's the way i was taught, and it works for me better then wiping the excess by hand. Take care, and have a nice shot! ;)
●Because tapping the handle may help getting the coffee off the sides but it causes small fractures within the puck and that causes channeling. So, the water will always look for the quickest route through the puck, the fractures. Also, tamping after tapping the puck will not seal those fractures because they are so small we dont have enough strength to re seal them.
